This junmai sake presents crystal-clear with faint golden reflections. The aroma profile is elegantly restrained - steamed rice, chestnut, and a whisper of anise. The palate is dry yet layered, with flavors of cashew, white pepper, and a subtle earthiness that speaks to traditional brewing methods. Made with Gohyakumangoku rice polished to 70%, it earned 92 points for its structural purity. The finish is clean with a pleasant graininess. Excellent slightly warmed with grilled fish or at room temperature with aged cheeses. The brewery's use of ancient kimoto yeast starter develops remarkable depth without sacrificing drinkability.
